Three day weekend, baby! My boss has been at a dental convention since the 15th, so it's a bit longer than 3 days for me. The plan was to get lots of writing done during my time off. I'm pleased to report that my novel is just about finished. Did you catch that in the last part? It's difficult to convey sarcasm through a blog post. Have a fun weekend, everyone!

It's finally the weekend. WOO HOO HOO!!!  I, for one, am ready. Can you tell? And Sexy Nerd made dinner tonight! This weekend is off to a wonderful start.

I'm participating in BlogHer's Life Well Lived campaign and have been asked How do you organize paperwork both online and off? Hmmm... Online, I think Pinterest is a handy new way to keep track of things. Before this site came along, I relied heavily on bookmarks. The problem? Soooo many bookmarks! It's much easier to find the recipe I'm looking for or the website I'd seen earlier when there is a photo accompanying it. As for offline, I'm afraid you may be better off skipping my advice! This morning, I went to grab my Free Lunch at Tucano's birthday coupon. But, of course, it wasn't inside my restaurant coupons envelope. It wasn't inside my coupon tin at all. Yesterday, I was finally able to use the Easter shapes pan that I found post-holiday at Target last year. It imprints your baked treats with shapes, like the Easter Bunny, and Easter basket, and a decorated Easter egg. At least, it is supposed to. As you may have seen on the LambAround Pinterest boards yesterday, I baked up a batch of Strawberry-Buttermilk Baked Doughnuts , which were featured in last month's Oprah magazine. Tasty stuff! I substituted a mixture of soy/almond milk for the buttermilk (all out) and used lemon instead of strawberry. Half my batter went into my Easter pan and the other half was allotted to my mini doughnut pan. (Sexy Nerd, BTW, thinks it's ridiculous that we own such a thing. This is from the fellow with a lathe in our garage, which he purchased for making models of nuclear bombs . Yeah.) Can you see the Easter Bunny? It's a cute idea, but I'm unimpressed. First up, I want to share something completely stupid I did this morning. I made oatmeal pancakes just for myself. I halved the 2 person recipe. At least, I halved everything up until the last 2 ingredients - oatmeal and flour - then became distracted and threw in double the amount needed of each. The batter was crazy thick, but I had never tried the recipe before and assumed it was just supposed to be that way. Those were some really bad pancakes. Have a happy Sunday, everyone!

Earlier today, I pinned and tweeted that I was in the process of baking a chocolate applesauce cake. Behold, the yummiest, most easy cake ever! Sexy Nerd's Slice 'O Cake My Cake (Funny enough, I didn't notice those chocolate cake crumbs on the stove knob until reviewing my photos.) If, like me, you have a jar of applesauce slowly fermenting in the back of your refrigerator, you're going to want to try this. Good morning and happy Super Bowl Sunday everyone! It should be a good game between...uhhh...the two teams that are playing today. I'm just in it for the funny commercials, which I'll be watching online. Did I have you fooled? And an extra hello to my sorta new SIL, Joanna, who just moved here from Poland late last night. Sorta new because I haven't seen her since before last years' wedding, and even then I think we only met twice. I doubt that she reads my blog, but a hello seems in order, just in case. Okie doke. I tidied up for you, but there's always more to be done. I wonder if there's something like Merry Maids for blogs. Okay, deep breath. Are you buying my calm and collected act? Sexy Nerd told me to tackle my SITS day the same as when someone comes to visit our home, which is to kick back and leave everything as is, insisting that no one cares or is going to judge us in any way just because of some unvacuumed carpet or smudges on the light switches. He gets in trouble before every guest and insists he has no idea why, all while eating in front of the TV and spilling crumbs on the couch! But perhaps Sexy Nerd is right this time. Happy New Year! Sexy Nerd and I will be celebrating at the zoo. Yeah, we're fun and dorky like that. Sitting here trying to eat my toast ( yeowch !) it seems like an ideal time to look back on 2011. Let's see... I stepped outside (waaay outside) my comfort zone and attended Camp Blogaway . It's not something I would do again, but I'm impressed with my shy self for going. We bought 13 acres in the mountains for our future dream home ! Sexy Nerd and I became an uncle and aunt... fear of babies be darned. We traveled to Santa Fe (does this still count when you live in Albuquerque?) and San Francisco . Hmmm...what else? Pica resolved to act smarter in 2011. It didn't stick.  I showed you my pale, hairy leg. Here at LambAround, being classy is #1. As for 2012, I'm hoping we'll finally make it to Australia to sight see and visit my family. Sexy Nerd and I have been together 8 years and he still hasn't met my Papa! Craziness. Will we have a baby ...
