Crepes Recipes and Frieda's GIVEAWAY

Behold...the 50 Calorie Giant Cookie!

 
Giant YUM!

And only 1 measly gram of fat. Can you believe it?

Best of all, with the help of your toaster oven, these mega-cookies crisp up in less than ONE minute! Prepackaged crepes, where have you been all my life?

Of course, it couldn't be easier to fancy up a crepe. Filling them with chocolate chips and mini marshmallows before their party in the toaster oven gives you smores crepes. Blueberries and whipped cream (skip the toaster oven!) is also yummy.

But, have you ever thought to make a savory crepe?

Broccoli and Cheese for Mees, Please!

LambAround's Hot Ham and Cheese Crepes
Serves 4
  • 4 Frieda's French Style Crepes (available near the berries in most produce departments)(Ralph's if you're in Southern California, you lucky duck)
  • 1 Tbsp Olive Oil
  • 2 Garlic Cloves (diced)
  • 1/4 C Onion (diced)
  • 2 C Spinach
  • 1/2 C Broccoli Crowns (finely chopped)
  • 1/2 tsp Crushed Red Pepper
  • 1/4 C Water
  • 8 Slices of Ham
  • 4 Slices of Cheedar
  1. Heat olive oil in a large pan on mid-high heat. Add garlic and onion and cook until onion is translucent.
  2. Add spinach, broccoli, crushed red pepper, and water. Cover and let cook until water is gone, approximately 8 minutes.
  3. While the vegetables cook, prepare each crepe by layering 2 slices of ham topped with 1 slice of cheddar on each crepe. Go close to, but not touching or over, the edge of the crepes.
  4. Spoon the hot vegetable mixture evenly over each crepe.
  5. Roll each crepe and place, seam down, on a nonstick or greased pan. Bake at 300F for 5 minutes (another instance where a toaster oven is ideal!)
For something so simple, don't these look so fancy?

  75. My all time favorite thing to do with crepes is fill them with warm sweetened cheese, like marscapone or cream cheese, wrap them up and warm them up in the oven. Once they're nice and warm, I sprinkle some powdered sugar on top and some fresh blueberries and strawberries. YUM!!!

  171. As I just made strawberry jam, I would probably spread some of the yumm on my crepe and add some whipped cream OR maybe some homemade yogurt..mmmmm....
    Although, a more meal type filling does have major appeal. (AS you have now made me HUNgry!:)

  173. Wow. There are a BUNCH of recipes on the Frieda's site that I want to try. In the crepe category Fresh California Avocado Crepe-Wrap, Individual Quiches in Crepes, and ALL of the dessert crepes would make my must-try list. (gonna need to get a lot of crepes now.)
