Ham and Cheese Crepes Recipe

I slaved over these homemade crepes all day.

Just kidding! My secret ingredient? Prepackaged crepes, which taste just as good, if not better, than homemade.

I have a fantastic recipe for you today. But first, behold the 50 calorie giant cookie...

Best of all, with the help of your toaster oven, these mega-cookies crisp up in less than ONE minute! Prepackaged crepes, where have you been all my life?



Of course, you can also devour these Frieda's French Style Crepes (or other prepackaged crepes) as they are intended, with a fruit or mascarpone filling. It couldn't be easier to fancy up a crepe. 

Filling them with chocolate chips and mini marshmallows before their party on the stove or in the toaster oven gives you smores crepes. Blueberries and whipped cream (skip the toaster oven!) is also yummy.

But have you ever thought to make a savory crepe? Now my all-time favorite sandwich, Hot Ham & Cheese, is also a delicious crepe.

Ham and Cheese Crepes Recipe

Serves 4
  • 4 Frieda's French Style Crepes* (available in the produce department at most grocery stores
  • 8 Slices of Ham (lunchmeat - not thick slices leftover from Thanksgiving)
  • 4 Slices of Cheddar or 1 C Shredded Cheddar
  • Spicy Brown Mustard (on the side for dipping - optional)
  1. Prepare each crepe by layering 2 slices of ham topped with 1 slice of cheddar (or 1/4 C shredded cheese) on each crepe. Go close to, but not touching or over, the edge of the crepes.
  2. Roll each crepe and microwave until the cheese is melted, approximately 30 seconds. (Depending on your microwave, you may need to add time.)

Hot Ham and Cheese Crepes Recipe - Extra Healthy Veggie Version
Serves 4
  • 4 Frieda's French Style Crepes* (available near the berries in most produce departments)(Ralph's if you're in Southern California, you lucky duck)
  • 1 Tbsp Olive Oil
  • 2 Garlic Cloves (diced)
  • 1/4 C Onion (diced)
  • 2 C Spinach
  • 1/2 C Broccoli Crowns (finely chopped)
  • 1/2 tsp Crushed Red Pepper
  • 1/4 C Water
  • 8 Slices of Ham
  • 4 Slices of Cheddar
  1. Heat olive oil in a large pan on mid-high heat. Add garlic and onion and cook until onion is translucent.
  2. Add spinach, broccoli, crushed red pepper, and water. Cover and let cook until water is gone, approximately 8 minutes.
  3. While the vegetables cook, prepare each crepe by layering 2 slices of ham topped with 1 slice of cheddar on each crepe. Go close to, but not touching or over, the edge of the crepes.
  4. Spoon the hot vegetable mixture evenly over each crepe.
  5. Roll each crepe and place, seam down, on a nonstick or greased pan. Bake at 300F for 5 minutes.

Hello, my bloggy friends. I have a HelloFresh complaint and believe they are pulling a scam. Yours truly came *this close* to falling for it.  Maybe scam is too harsh of a word. Sneaky? You can decide for yourself. The fact that there are so many Hello Fresh complaints online does seem suspicious. My main complaint about Hello Fresh has to do with their promotional rate, which seems like it is set up to be intentionally misleading (more on this below). Despite so many people complaining about being charged more than they thought they'd agreed to, Hello Fresh maintains this as part of their business model and continues to mislead. So it's intentional, right? I do not recommend Hello Fresh. For starters, the service is just ingredients-by-mail with recipes, not meals. You can buy your own ingredients for much less, especially now that most grocery stores conveniently offer pickup and delivery. I'm happy to report that my research on Snopes and other sites has shown that these do not explode, at least not when used properly.
